Pour the mixture into a buttered baking dish forming a layer about half an inch high, even out the surface well, then let it rest in the refrigerator for 2 hours. Cut the mixture into squares or diamond shapes, dip them in flour then in egg yolk diluted with water, then in breadcrumbs, and finally fry in boiling oil.
