Cow’s milk cheese with a minimum of 150 days of maturation in the cellar before the pit. Consistent crust of straw-pink color. Ivory-colored paste slightly glanced.
Circular shape slightly deformed in pit, Intense fragrance. Fine and mild in flavor with pleasantly bitter aftertaste. Well characterized at the pit, which gives it a balanced and pleasant spiciness.
It is delivered vacuum-packed whole or in wedges:
Each wedge weighs an average of 0.800 kg, while the whole wheel weighs an average of 5.500 kg.
