Truffled Sunflowers with Pecorino in Cave and Fossa cheese

Ingredients:

  • 10 slices of toast bread,
  • gr. 100 of grated “Pecorino in Grotta” and “Formaggio di Fossa” cheese,
  • gr. 60 of butter,
  • gr. 30 of fresh ground truffle,
  • Truffle flakes for decoration.

Using a flower-shaped cookie mold, cut out about 20 tartlets from the bread slices .Combine the softened butter with grated Pecorino in Grotta and Formaggio di Fossa cheese with ground truffle, mix well until the mixture is smooth and homogeneous.With a pastry cloth pouch, arrange the mixture in equal parts on the tartlets and decorate with the truffle flakes by arranging them in a flower shape.
